"Peppa Sauce", as we call it. Also known as "Pepper Sauce".

Various Serrano and Charleston Hot chili peppers soaked in vinegar. The best thing about this product is that when you run out of sauce, you can refill the bottle with hot vinegar, wait three days and re-use.

When my Mom got in her canning mode, she would make jars and jars of these to give to friends and family to splash on Collard greens, black-eyed peas, neck bones (yep!) and cabbage. I gave it a twist and added tiny slivers of garlic and shallots.

On the Scoville scale, they’re range between a 1,500-10,000, so they’re hot, but not unbearably hot.
